Have just refitted radiator after cleaning off mud and all is running well but the temp gauge wont register. Only had engine running at idle for 2 mins as too scared too run without gauge, will it take a while for the engine to heat up?

You will get a heap of different answers here. My temp guage usually starts to move after 4 or 5 minutes and is usually up to full temp in about ten minutes. This is idling in the shed before I go anywhere. Removal of the radiator shouldnt affect your temperature gauge though. Temp gauge sender unit is on motor so unaffected. You may have bumped it though so have a look around your thermostat and see what you can find, see if you have a loose connection. If you didnt change thermostat or touch anything on the block side, fill your radiator and run it for a bit longer. Keep in mind, before your factory thermostat opens minimal water is circulating anyway. Its never good to run a water pump dry but it sounds like you just need to run it for a bit longer.

kinda O.T...is it a good practice to let the engine heat up to its normal operating temp before taking off?

No need to warm up engine before driving just wait till oil presure comes up and dont over rev it till its warm. The temp gauge will be a wire knocked off probably on the thermostat housing. Engine will take at least 5 min to warm up
